9 out of every 10 new restaurants fail… But these succeeded!

How do you beat the odds? Coming soon, our next episode on Restaurant Profitability.

Cava Tapas and Wine Bar is the dream of two long time friends, John Akar and Gregg Sessler. Together, they have combined their years of experience in the restaurant business in order to build this unique establishment.

Featuring two wine bars, one on street level and one in our Wine Cave, John offers a diverse and always changing selection of international wines to be paired with Chef Sessler’s modern and classic Mediterranean cuisine. Here is the restaurant’s web site on this link.

Our other guests in this episode will be Jim Miller, discussing his venture Fire and Ice, Jeff Fournier on 51 Lincoln, and Karen & Steve Waller on Center Cafe. This episode will be airing in mid November.

Established in 2008, Cava was opened by Chef Gregg Sessler and business partner John Akar. Located in the heart of historic downtown Portsmouth, New Hampshire, and is just a brief walk from the Portsmouth Parking Garage. Quaint and picturesque, Commercial Alley is home to several small independent businesses. Perhaps one of the most noted features is Cava’s Vertical Garden. In the summertime our guests dine under New England’s first native outdoor living wall.

Featuring two wine bars, one on street level and one in our Wine Cave. Akar offers a diverse selection of fifty plus international wines poured by the glass. Chef Sessler’s inspired modern interpretation of Spanish tapas uses only the freshest quality ingredients to create innovative menus.

“There is absolutely no substitute for the best. Good food cannot be made of inferior ingredients masked with high flavor. It is true thrift to use the best ingredients available and to waste nothing.” – James Beard
